    That was why I was planning on the brisket on top. I would put the turkey breast on when I foil the brisket. Would the turkey cooking on the bottom rack somehow contaminate the brisket in foil on the top rack?

    So it is not attached to the top grate. Do you just push it in partially so the probe is sticking in horizontally or is it hanging vertically along the wall of the smoker below the grommet?

    Do people that use the wsm for salmon find that it leaves a fishy smell to the wsm that affects the taste of pork etc done on subsequent cooks? In reading Harry soo's methods he won't use his competition smokers for fish. I didnt know if that was a big deal or not.
