    Rancher Charcoal

I don't know about Rancher Charcoal, but I tried Sams Choice Charcoal from WalMart yesterday. It's about $ 4.85 for 18-lbs. I used a full ring to cook a corned beef brisket. Started with the Minion method, the WSM stayed in the 240F range for 12-hours with only one vent adjustment. Rusty

    Walmart Brisket

Mike, I soaked the 3-lb corned beef brisket about 3-hours. I changed the water about 3-times. I dried it off and placed it in a stainless steel bowl and coated it with dry rub. I used the BRITU dry rub from this website (substituted dry mustard for the MSG that I didn't have and Dollar Store...

    Scored a Weber Go-Anywhere charcoal grill for $ 10

I picked up a Weber Go-Anywhere charcoal grill for $ 10 on Craigslist. The date code is "N", 1991. The original owner said it was used one time. If he hadn't told me, I wouldn't have known. It looks brand new. It's one of the old Go-Anywhere's with wooden handles. I also have a Smokey Joe Gold...

    Walmart Brisket

Yesterday, I bought a small brisket ($ 5.50 about 3 or 4 lbs) at Wal Mart called a "Corned Beef Brisket". Also in the package is a separate spice packet with peppercorns etc. Would you just smoke this brisket, or do I have to soak it first? It says on the wrapper that it is injected with a salt...

    Wood for smoking turkey?

I always brine the turkey for 24-hrs and cook it at about 325 F, with no water in the foiled water pan. I use just hickory. An unstuffed, brined, 14 to 16-lb turkey, takes about 3 to 4-hours until done (165 F internal breast temperature).

Question about getting a replacement handle

Yes, when you add Weber type side handles, the vinyl cover that comes with the WSM will no longer fit. I had a cover that was on my old vertical square Brinkmann smoker. The cover from the Brinkmann vertical fits my WSM. Rusty

Question about getting a replacement handle

Joey & Matt, I was the one that fabricated metal straps for the Weber plastic handles. I obtained steel flat from a local hardware store. It was 1/2-inch wide by 1/8-inch thick. At my local hardware store (Orchard Supply Hardware - OSH) it comes in 2 and 4 foot lengths. I removed the top WSM...

    Quick Chicken Skin Temperature Reference

You might ask her how she knows what dirt tastes like. I have noticed that when I over-smoke something it tastes kind of like the smell of old railroad ties. Creosote. Rusty

    Something other than pork, ?

Brine some chicken thighs and smoke them. You can make pulled chicken sandwiches. The smoked chicken is also good in things like tortilla soup. Rusty

    pullin' my pork

I use a KitchenAid Mixer. I cut the meat into 2 or 3 inch chunks and use the triangle shaped paddle of the mixer to knock the meat apart at medium to low speed. I get perfect pulled pork from this method. Rusty

Added swivel casters to my WSM

The conduit was a good idea to brace the legs with casters. I used three straight 16" pieces of 1/2" conduit to create a triangle behind the legs. I flattened 1-1/2" on each end, bent them at an angle and bolted them to the legs about an inch or two above the wheels. Rusty

What is your signiture dish on the Weber charcoal grill?

Welcome Jamie. Thank you for the opportunity to ask questions. What do you consider to be your "signature" dish on the Webber charcoal grill? Thanks, Rusty

    Quesadillas

You need to fry with some type of cooking oil. I use a canola oil spray. Spray lightly on each side and cook on cast iron skillet until slightly browned on the high points of the steam bubbles that form on the flour tortillas. Make sure you start out with cooked chicken. You would burn the...

    WSM in colors!!!

If you made a WSM out of uranium, one of two things would happen. Either the charcoal would light itself or you wouldn't need charcoal. But you would need lead lined BBQ gloves. Also, the government might show up at your house and ask where you got the uranium. Rusty
