    Joe, what size diffuser do you use? If I did this mod as shown in your pic, my 12" TC plate would likely block most if not all of the opening cut out in the bottom of my pot.

    It's cooking away behind me as I type this - whole chicken. One thing I'm noticing right of the hop, A little vent adjustment goes a long way (up or down) and it doesn't take long to happen. I'm assuming the limited volume inside compared to my 18.5 is why.

    Yup love our 320 too. Recently bought the Weber griddle to replace 1/2 of the grate - it's great (no pun). Nice looking grill, lots of space for the average back yard family cook and uses less gas than most full size grills.

    Welcome aboard Bill and great choice in smoker. Don't go too hard on Weber, overall the cooker is solid - capable of cranking out Q as good or better than Q from smokers costing thousands more. I gave up on my lid thermo a long time ago and instead use a Mav 732 and Thermapen for temp management.

    As Bill said......Craycort will do better. If you're looking for a more budget friendly fix, what about measuring the distance between the top of the charcoal grate and and the bottom of the (unloaded) food grate and then cutting a few fire bricks that could stand on end between the grates...
