I was at a European market Sunday, they had the mini Persians there so I thought I’d try them. Then I saw some that were called Russian cucumbers, very green and firm and covered with bumps. I decided to try them, I’ve never seen them before. They’re in an ice bath now.

I think that’s what I’ll end up doing too. I did start some briquettes directly in the lower position for a chuck roast I did the other day, worked fine obviously. I was amazed how rock steady the temps were, never wavered from 250 for 8 hours!

The first thing I noticed during assembly was how far away the gas tube is from the upper coal grate. My first thought was, that’s not gonna work well. I’m disappointed because I love the gas assist on my Performer. I guess I’ll find out when I try it.

I just recently discovered Jaime, I’m actually watching him as I write this! He’s cooking for his old band “mates” (Scarlet Division). He’s got his own 24 hour channel on Tubi TV. No Naked Chef episodes but there’s a lot of his other shows on there. I like him, can’t believe I never heard of him...

Hi Brett, welcome from PA! I’ve got my 18” on an SSP cart, no mods other than a lid hinge. It’s nice being able to move it so easily and having convenient charcoal storage and workspace. Being 6’4”, I appreciate the additional height it provides as well. Can’t wait to see your finished product!
