Game plan for first Pork Butt - how's this sound?

just curious, how did you measure your smoker temp? 9 hr 40 min seems like a very long time for a butt that size. I wonder if your smoker temp was lower than you thought. Not that it affected the quality but the time.

Got 14.5" WSM for $100 - Clearance at Walmart

as mentioned above, if you were only going to keep one I'd keep the 22. If I was going to make space for 2, I'd have the 22 for big events and the 14 for a quick chicken or two for the family meals.

A few preparation questions before my first cook.

The chunks in both bags will be about the same size. However regardless of the bag you will have all kinds of sizes of "chunks" in the bag. either will be fine. I personally would use about 3-4 and that is it. I am not a huge tons of smoke on my meat guy. it is much better to have too...

    New 18.5 owner

That is a great price. They hardly ever go on sale. Why it was on clearance at HD is curious to me, but you made a GREAT purchase. Enjoy.

Prime flat brisket vs. Packer choice brisket - brisket newbie

Costco had Prime whole packer for $2.99 (In Columbus OH) about 2 weeks ago. I should of jumped on it. Went back 4-5 days later to get one for this last weekend and price had jumped to $3.29. Still not bad. The Full packer (Prime) was $3.29, the flat (choice) was $6.29. Better grade and you...

    wood on wsm

I can't figure out from your post if you started ribs and chicken at the same time, and then 2 hours into it took off the chicken and still have 4 hours on the ribs. Or if you did the chicken, off it came, and now putting on the ribs. if it is the 1st one, I would not add more wood if it is...

    What is TBS?

Once I pour the coals I lit in the weber chimney onto the coals in the WSM and put it together, it takes about 90 minutes for the billowing white smoke to suffice. is that normal or way longer then most experience?

    Just put it together

I don't know what size the bags are you have, but usually around memorial day, 4th of july, & labor day Lowes and Home Depot put the 2 bags of 18.5 lbs each on sale for $9.99. $10.00 for both, or $5.00 a bag. you may want to watch for that as well

    How many whole chickens?

Umm.. ah... as I re-read it I bet you are right. I just read "pull" and started thinking pulled chicken sandwiches.

    How many whole chickens?

whenever I read posts about "large parties" I wonder what is the need to smoke the chicken (or pork or whatever) during the the actual party. Figure out how many you need to feed the crowd (lets say you decide on 14 for argument sake). I would smoke 7-8 of them which would easily fit, then in a...

    Best accessories to start?

Tons of things you can buy, but you don't have to go overboard. Maybe one thing you might think about are "bear claws" or "bear Paws". Link attached as an example. I find these to be helpful. I use them for shredding pulled pork etc. but also especially for picking up thinks like hot cooked...

Planning First Big Cook NEED HELP!!

Any thoughts about smoking the ribs the day before, foiling them and tossing in the fridge, then warming back up to serving temp the next day in the oven? Then you only need to focus on the pork butts the next day. Plus then you can use both smokers for the ribs, and then both (If needed) for...

I wonder if they replaced the thermometer... may be an after market one.

    Used WSM 18.5"

Might be a good price. I will say maybe it is the angle of the camera, but in the first shot of the WSM it looks like the heat shield is completely messed up. Again, could be shadows or angles. Also didn't look like it has the new temp probe holes that they have now. Again may just be a bad...

    18 or 22, I'm struggling.

Thanks. I love my BBQ but $1500 is pushing it. I am quite happy with my I think ~ $650 Weber Genesis gas grill (bought it years ago) and my 22.5 WSM. Was more curious than anything

    18 or 22, I'm struggling.

I am kind of late to this party, but in case you think you are crazy to think this much about this, I actually cut out 18" and 22" circles from cardboard, and carried them around the house asking everyone about there opinion. The only thing I really learned is my 9 year old daughter really...
