    Craig...the meat and air probe should measures temps the same. Do the boiling water test to check them for accuracy.

    Check out Harper's Country Hams (hamtastic.com) for a great selection of country hams and other great foods. They win awards every year in Kentucky, which is where they are based. They ship anywhere in the US in a styrofoam cooler and dry ice packs for a decent price.

    Lee, I agree with you. When I do four butts at a time they all seem to get done at the same time. If not simply pull the top two out and let the bottom two continue to cook until they're done to your liking.

    John, Ace and Walmart both carry them. About $3 a pack.

    John, Fire starter cubes work great. Most are a combination of wax and sawdust. Just light it and put your chimney on top. 5 or 10 minutes later the bottom coals are burning very well. Usually takes about 20 minutes or so for the entire full chimney to be ready to cook.

    Smoked Jumbo Quail

    Thanks Kevin! I do like hot foods. I will be giving this a try in the next week or so. Mark, if you like quail try Manchester Farms online. They have the jumbo quail which are about a 1/4 pound each.
