    Nomex Gasket Kit Question

I installed the nomex gaskets on my webers because I wasn't happy with how a couple parts fit together. On my 14.5 the lid and center section fit together poorly. Nomex gasket there. The access door on my 14.5 was small and fit pretty well. Didn't gasket it. On my 22.5 I bought the Cajun door...

Fiber Washers used in assembling new WSM 22"

The fiber washers are to protect the paint on certain contact points. I was stressed about putting them where needed, then I did a few mods and just used stainless. After drilling holes in the wsm, I quit worrying and stainless is doing great. One other thought, on my little portable 14.5 that...

    14.5 temp and heat shield

Yeah, that's how the manual shows the heat shield placement for the 14.5. Doesn't have an external shield. I did a cook the other day without the heat shield and elevated the charcoal grate just a tiny bit and it made all the difference in the world. It run exactly like my 22.5 now and I have a...

    14.5 temp and heat shield

Okay so I just completed my 6th cook on my new 14.5 wsm. I also own the wsm 22.5, but just got the 14.5 for camping and portability. I like to have water in the water pan. So far I'm finding that to keep stable temps up (250 - 275), I'm having to run the lower vents more open, to fully open...

Tips on getting a good stable temperature

Ben I had an 18.5 before my 22.5 and 14.5. I miss it. I don't think you're using enough charcoal. I always started my cooks with a minimum of 2 1/2 very full chimneys, sometimes more. If you're doing a short cook (5 hours or less) you will have a bunch left over and can reuse the coals towards...

Correct spot for the little black washers

Ok finally talked to someone at weber who knew what they were doing (I believe). The fiber washers are to protect porcelain from contacting the screw hardware. So on the legs the fiber washer goes on the inside between the metal washer and porcelain. On the middle section they go on the outside...

Correct spot for the little black washers

Okay so I'm putting together my third wsm and have had the following questions each time I assemble one. First what's the purpose of the little black washers? Second, where's the correct spot for them to go on the wsm legs and rack holders? I called weber and they couldn't tell me either...

    14.5 vs 18.5

I have a performer as well as my 22.5 wsm and actually bought a 14.5 today for camping trips. I had an 18" wsm and sold it to get the 22.5. I like the 22.5 because of the height and size. As for me, the performer does do long cooks and smokes, but I am a true believer in using a water pan with...

Does the wsm bottom vent position affect smoke quality?

Miguel, like I said in my first post I agree with you on which vents to use for temp control. However, I have on occasion been unhappy with the taste of different smoke woods. For example, cherry and apple don't taste as good as hickory or oak to me. Not sure if it's the wood or maybe how much...

    Handles on the Cooking Chamber

I just put the lid hinge attachment on my new 22.5 wsm and the cover fits over it percectly. Can't even tell it's there. Maybe the 18.5 has a tighter fitting cover, but I would imagine they fit similarly.

Does the wsm bottom vent position affect smoke quality?

On my wsm I've always smoked with the bottom vents around 1/2 way open and left the top vent fully open. My reasoning behind this was temp stability and an easy exit for the smoke. I can hold 225, 250, 275 or anything in between for hours with as little as a couple degree fluctuation. Recently...

About the Cajun bandit door (wsm 22.5")?

Thx, I just got my shipping notification and it says I will get it by the 6th. Sweet

About the Cajun bandit door (wsm 22.5")?

How long did it take for the Cajun bandit to ship out your door? I ordered mine last Saturday 12/27/14 and haven't heard a word. Were they quick to ship? I hate waiting for things. Thx

    Temp control 18.5 vs 22.5

Ok, I got my 22.5 wsm today and am doing a test run as I speak. Here are my initial thoughts. It's definitely a lot bigger which is a positive. The water bowl is very shallow and my 18.5 has a deep one. I kind of prefer the deep one, but we'll see. Maybe I will like the added room to play with...

    Temp control 18.5 vs 22.5

Sweet, that makes me feel much better. I'm going to go buy it tomorrow. You know, in the beginning I was thinking of getting a thermostat temp controller so I could set it and forget it, but man these wsm's hold temps like nothing I've ever used. I can't believe the hours on end these smokers...

The continued struggle to reach at high heat

I used to pile the charcoal (and to much) to high and close to the water pan. Be sure to leave as much space as possible between the coals and the pan for adequate air flow. Also I've piled the coals to high and have had them fall over the ring and block the air vents a bit. Now I use way less...

    Temp control 18.5 vs 22.5

Hi everyone, I have a buyer for my 18.5 (if i choose to sell it) wsm and the opportunity to get a 22.5. My main reason is just for added cooking space. However, I'm a little nervous because I know my 18.5 will hold a certain temp for hours without budging. I can hold 225, 235, 250 or whatever...

Simple smoked whole chicken on the wsm

Hey everyone, I spent quite a bit of time researching how to slow smoke a whole chicken on the weber smokey mountain 18.5". I'm a somewhat inexperienced smoker / cook and it seemed most recipes were a little to technical or confusing. I also tend to like the simpler taste of garlic salt and...
