    I just got a new Stoker and had to assign all the blowers/probes, etc. Once setup you almost never have to do this again but I can easily see how that happened to you if your were significantly changing your setup. Glad you got the save!

    I ended up wiping down the chicken and cooking it indirectly as Marc suggested. When the buttermilk dried a bit I switched over to low direct heat. Browned nicely without burning.

    The buttermilk tenderizes the chicken. I add shallows, garlic, pepper and salt. Great taste but need to wipe it down before grilling and sugar in buttermilk burns easily.

    I use a drip pan but not the charcoal baskets. That way you can your charcoal can be spread out a bit more. Also to minimize the fat burning I put some liquid in my drip pan ahead of time.

    Well, I upgraded my Stoker to enable WiFi and then downloaded StokerX on my Mac for the first time today. I did a test run and everything worked perfectly. Unfortunately I wasn't cooking anything but that will be fixed shortly. Joe, thanks for the amazing program!
