    Greg, As a former Utah boy, I know exactly what you mean by scrub oak. I think it will work. My suggestion is try something cheap (like a beer can chicken) and see how it tastes. Good luck and let me know how it turns out.

    My Salt Lick Chalenge

    Don't get hung up on just using pecan wood on the brisket. Most places here in Texas use oak as the main smoking wood. Some even swear by mesquite, but it's a wood that is easy to over smoke and get bitter. But some of the best steaks I've ever eaten were done over a hot mesquite fire.

    I saw Raichen do a brisket on a King Ranch on BBQU this week. He said he did have to replentish his coals every hour or so during the cook. Chalk that up to one more difference between these two lovely beasts.

    Gas or electric smoker?

    David, I live in Texas and started with an electric unit. It was good to learn with and do basic Q'ing. That said, it was/is not the same quality build as a WSM. I had to replace the electric heating element several times and eventually it died of 'cancer' which is what my family called it...
