    Yep, it is often called the the lifter. It's from the cap of top block or top sirloin roast. Also, Brazilians prefer to season it with rock salt in particular.

    How do keep those WSMs so clean?! Of course, mine have plenty of love taps from comps and traveling to & fro.; however, I've got plenty of soot residue and drippings from cooking to last a lifetime.

    The vent holes on the 14.5 WSM are the same size as all Weber BBQs. The 14.5 uses the same 3 hole configuration & damper plates as the 18.5. The only difference I've noticed is that the configuration is inverted from the 18.5 and the single vent hole is placed above the two other vent holes...
