    Maiden Voyage on the WSM

I would start up with at least 1/3 of a chimney of lit coals otherwise you'll be waiting a long time to get to temp which I'm guessing will be 250 -275. I start mine with all vents wide open until you get close to target temp (50 degrees or so)then close the bottom vents to 1/3 open. Let us...

    Tips/Advice on competing on two '22 WSM's

I think you could have two foiled pans of brisket on top of each other on the bottom grate and one large foiled pan holding the butts on top grate. You may have to make the large pan fit. I would consider having your brisket and butts done early then put in cooler or cambro to free up the 22...

    Completed first BBQ Competition

Thanks for everyone's replies. I appreciate any and all advice. As far as MikeD125's question, that transport set up worked great. I wrap each piece of the smoker in that stretchy plastic wrap used for wrapping items for moving. After the smoker is wrapped I'm able to lift the whole thing...

    Completed first BBQ Competition

Hey everyone. I completed my first competition last weekend. It was the 2nd annual Pig in the Park in Whitewater WI. Out of 29 teams, my team came in last, but my chicken placed 12th so I was happy about that. The rest of the meats were cooked by my other teammates using their recipes. They...

    Extention cords and hoses.

I've been reviewing competition check lists on line and most include extention cords and water hoses. My question is how long of cord or cords one needs and why do you need hoses?? If water is provided, I just thought you fill your buckets from a provided water source with their hoses / spickets.

    Where do you sleep ?

I was going to post this question myself. I did just buy one of those antigravity chairs to sleep in for my first comp, but im a little concerned about mosquitos ruining what must be an already expected interupted sleep at any comp. I was thinking of putting the chair into a camping tent or...

    Competition site preference

Yup Don, you guessed it. My first comp will be the Whitewater one. Any other advice you can give on that event would be appreciated. I do plan to go to the Kenosha one as well.

    Competition site preference

Currently Im gearing up for my first comp which will be in June. The application information is out now and on it I have a choice of picking either a grass or paved space. For those of you that competed before which is better and why. I can see where the pavement might get hot on a hot day...

What's the best method to sharpen knives

Just wondering what you guys do to sharpen knives. I use a simple hand held sharpener that you pull the knife through, but they still dont get as sharp as when they were new. I was thinking of getting one of the electric sharpeners but do they work for the cost and can you ruin a knife on those??

    Smaller beef cuts in WSM?

Id go with the chuck roast using the pepper stout beef method. I find just foiling it for two hours then slicing it into chunks of beef instead of shredding it is the best.

    Transporting WSMs

Thanks Chris thats what I was looking for, now I know it can be done. Rick that is a great idea using those twist locks. Do you guys know what size the cargo carrier has to be to fit a 22 WSM??

    Transporting WSMs to comps.

I have a jeep charokee but I plan to pack the inside with everything else I need for a Comp, so the Cargo Hauler would transport the smokers. Im not sure if securing the smokers to that is safe. I wouldnt want to bend the cookers by strapping the heck out of them.
