    Chris, If you do not mind smoking up the ceiling a little I do not see any problem. My patio is covered and open on two sides and I always set up my WSM just under the cover near the edge. I have done this for several years and there is just a little discoloration on the ceiling. John

    I would have to agree with Mark. Gibson's Red Sauce is excellent, In fact when judging sauce at a contest last year I am almost postive that 4 of the 6 entries at my table were "doctored" versions of Gibson's sauce. I also like to use Cattleman's as a base and add a little more heat. John

    A year or so ago someone on this site suggested using the side burner of a gas grill, if you have one. That works great for me. Just set a chimney on the side burner for about 3 min. John

    Dave, I bought one bag and did not really care for it. I had to open the vents about 50% more than normal to keep the temp. in range. Even though the Kingston cost a little more I feel it is worth the extra cost. JMHO John

    Pork fat is white when it is cold. When I was a kid and we killed hogs on the farm and rendered the fat into lard it turned snow white. Even if you buy lard today in the store its white. John

    I have never attempted this but I wondered if anyone has invested in a small bag of the Kingsford Match Light charcoal and put about 4 of those in the bottom of the chimney then fill with regular charcoal and light with a match. Do you think a small amount like that would impart a taste? John
