Short Ribs - A new favorite of mine...low and slow...

Looks great... I'm doing some of those this weekend! I love the smoke ring and the fact one can see how 'tender' that really is! Good job!

Where do you guys store all your accessories?

I keep most stuff inside my gas grill (that I never cook on). It's a massive 4 burner bastard so I keep a lot of charcoal, wood chunks and grate lifter in the main part. In the drawer are the tongs, spatulas, bottle opener, lighters, etc. The (fastest ever) Orange Thermapen and the Maverick...

Throwing my hat in the bacon ring

That's not enough bacon for a year... a month perhaps, seeing how it's homemade. :p Very nice! Can't wait to see the end result of this! Make me want to make Bacon again - It's been way to long! CM

    Wasting Charcoal

I really like this idea a lot better... I use the charcoal rails to keep the coals to one side. This makes like a lot easier by just having to lift the basket and shake the ash off... CM

    Bacon, Pork and Smoke

Is it wrong that I keep returning to this page and staring at this? I am going to do one of these very, very soon... It's been a while since I've done my "go-to" Bacon Bomb! Stuffed with Spinach and Feta, cooked to 150 and then basted with my homemade bbq sauce to get a wicked glaze on the...

New Windbreak for WSM and Performer

That's awesome! The only trouble is here, in Vancouver, BC, we don't really get snow. Perhaps, however, I could go to the local ice rink and get snow from there... Nah, I'll just stick with turning my Gasser around and using it... less shoveling and labor involved. CM

    Charcoal Storage

I have about 200+ pounds in the shed that I keep on a couple 2x4's and stack them on top of each other. I then put a tarp over top of it. I also have a couple of those Kingsford Charcoal Caddy's I keep near the BBQ's under the stairs (one for lump, one for briquettes) CM

I Want to Watch the Food Cook

I think it's a great idea, but I do not see it working... I think the window would get covered with grease and crud way too quickly. In addition, when I pop the lid on my smoker to put the meat on, it take a few seconds for the smoke to clear to see the grate. Might be like looking out a plane...

    2014 Throwdown Interest??

I would be down for this! As a fairly new member of this board, I think it's a great idea. I agree with a lot of the comments above, as to how we would "all be winners" and gives up an "opportunity to try something we would never try" As for whale meat, I may have an advantage as I live in the...

New (to me) 22.5 One Touch Silver

The grates are actually in a lot better shape than the photo shows... I think he had just dumped out the ash and never cleaned it. The inside of the lid has no flaking and hardly any grease on it. Gonna load it up with some lump and burn everything off and give the grate a good cleaning! I am...
