Poll: Do you light off your charcoal refills before adding to your WSM?

If I'm using lump I add it unlit. If I use briquettes I get them mostly white first in a stand-by grill then add. I keep the grill with some charcoal on the side lit and unlit and toss a few over to the lit side as I go. Did two flank steaks and three halfcocked chickens yesterday. My most...

    Salmon and Tuna smoke

For Hawaii standards that is waaay tooo long to cook tuna. Tops of seven minutes each side. If it's fresh, which it usually is, I prefer to have it seared on the outside and pink on the inside. Otherwise for us...tuna can be chewy and dried out if it's cooked too long. If it's really fresh...

    Smoke ring question

I find that woods like hickory make a lighter ring and fruit woods like apple and guava wood make a darker red ring. It definately is a sign of low and slow. Aloha! Greg Kemp

Anyone ever use really big smoke wood chunks?

I make my chunks "fist size" but some end up smaller. I fould it is easier customers to make chunks smaller than to make chunks bigger. Bryan S has the idea for downsizing chunks. Be careful wqith the chopsaw and small irregualr shaped wood. I use a chposaw to turn the logs into discs which I...
