    Have you noticed any texture issues from the long marinade with pineapple? I‘ve seen some recipes with pineapple call for shorter marinading times and they’ve said it’s to avoid texture issues but I’ve never confirmed it for myself.

    Fresh smoke wood chunks from Sharpe Gourmet Cooking Wood

    Has anyone used wood chunks from Sharpe and Fruitawood? Have you found one to be better than the other? I’ve used Fruitawood for the last few years and have been pretty happy with them.

    Friday Night Steak

    I had a prime NY Strip from Costco in the freezer that I reversed seared on the summit with asparagus. Steak was seasoned with Penzey’s Mitchell St Steak seasoning. This may have been my best attempt at the reverse sear. It’s cooked to a perfect medium.

    Thinking about a Weber Kettle 26er

    I completely agree. I haven’t needed to get accessories for my 26”, but when I’ve looked there aren’t nearly as many available as there are for the 22”. If my wife would let me I’d probably add a 22” to my collection, but I already get questions on why I need the 3 grills I have plus the WSM.

    Signals/Billows struggle to heat

    Good to know that your setup is working. I’m curious to see if it will work for me at temps higher than 250 without any extra modification, but will most likely wait for the weather to warm up before trying again.
