    Easy halibut!

Man that looks good! A chunk of halibut that size would cost $50 here...but I'm sure the cost of running your boat being considered it isn't that cheap up in Alaska either.

    Thanksgiving Turkey

No I didn't, but I wish I had. The skin looks great, but it was rubbery. I cooked this bird at about 350, but only for 2.5 hours so not enough time to render the skin all the way.

    Thanksgiving Turkey

I did a 15 pound turkey on Sunday for Canadian Thanksgiving. Got it on the Performer at 3:00 for a 6:00 eating time. Brined using Chris A's recipe on the home page, then rinsed and put butter, salt, pepper and Newfoundland Savory in the cavity and under the skin. Used dual baskets with some...

    Throwdown #8: Ground Stuff

Unless its a truly wild near that hasn't been gorging itself at the nearest garbage dump you might want to pass. It's a bit greasy to start with, if the bear has been eating garbage it goes downhill from there...

    Sunday pork steaks

If you've ever eaten jamón ibérico from Spain you'd believe that it does make a difference. Unlike anything I've ever eaten in my life! I dream of going back to Spain just to eat this ham. I have a friend that raises Berkshire hogs on a free range farm, no scraps, just hay and what they find...

    Weekend cooks part 2

Thanks for your concern Morgan, I'm not one of the recently single ones though. Our really good friend and his long term GF broke up, then it cascaded and our other good mutual friends broke up shortly after. We've sort of taken them in on Sundays as they've both been in relationships for a...

    Weekend cooks part 2

We've been doing Sunday dinner with a few friends every week, some of us are dieting and others, unfortunately, are recently single. It's a support group sort of thing, but in the end time spent with good friends over good food is ALWAYS a good thing. Decided to make some Sirloin Tip Roasts on...

    Weekend cooks part 1

Been on a diet for the last week and lost 4 pounds. Decided to do a little cooking this weekend to have a reward. This is part one. Made some burgers on Saturday. 1/2 pound sirloin burgers, cooked direct over medium heat for pretty much the whole time. It's getting chillier, which is fine by...

    Football Food

I showed my wife that picture last night and she pointed out to me that we've got one of those things sitting on our kitchen counter...never occurred to me to turn it into a chimney! Thanks Arwin!!

    Spares & Backs

Jim I tried that recipe and we found the pickles VERY salty. Do you make it exactly as listed?

    Football Food

Can't believe that I haven't seen that mini chimney yet, but I'm going to Ikea on Tuesday to pick one up. Love the way you added the handle to it! Also, the food looks great!

First time use of BBQ Guru PartyQ

Also check the direction the blower is pointing in. You want it blowing across the coals, not straight down into the area the ash collects in. Also, if you're going for 250 you don't need 50 lit coals...you can minion start with 12-20 and be at temp in 30 mins using an ATC.

    BBQ guru which fan?

I got the 10cfm as well. Figured if I ever upgrade the pit to a 22.5 I won't have to upgrade the fan. I almost never damp mine down, the guru knows when to apply the blower, it just does it in shorter bursts when the damper is wide open. I've never had a problem holding 225 with the damper wide...

    Porterhouse in the House

Wow Jim, those steaks look killer! I really need to find one of those cast iron pans you've got the shrooms in...I've never seen anything like that up here. Is it a fajita pan? Where did you get it??

    Rotisserie pork butt....

Wow, I really need to get a roti, that butt looks fantastic!
