    Stuffed jalepenos - prep the day before?

    I always make them the day before. I use room temp bacon when wrapping and when you put them in the fridge it firms up again. No need for toothpicks that way.

    Thanks for the ideas Kevin. I was thinking about it and I could just go in a different direction with the beans. I made your frijoles borrachos a few weeks ago and they were great. I will need a big pot though as I'm cooking for 50!

    Rinsing chicken in vinegar bath

    So do you just pat it dry after unwrapping and then prep? Do you rinse pork after taking it out of the cryovac? At this point the only meat that I hadn't been rinsing was beef.
