    22.5 Door

I would be concerned about the bungee cords melting, but nothing comes to mind on how to fasten it other than bare wire. I might be tempted to play around with a foil pan rather than just foil. I wouldn't be too concerned about small leaks. Brett

What to serve for wife's birthday

Thanks for the excellent replies. While I would love to do salmon, what is available in Tucson, just isn't comparable to what I used to be able to get when I lived in Seattle. Oh well. Actually, she told be she wanted Gyros, so I will look about doing those. Probably a combo of lamb and...

What to serve for wife's birthday

So my wife's birthday is Dec 26th and she would like something smoked for a party. However, she is tired of Pulled Pork, Brisket, and chicken. Does anyone have any suggestions? It would be for about 20-30 people. thanks, Brett

    Turkey - Whole or Butterflied?

I do have the bigger one, but it fit on there with room to spare. Brett

    Turkey - Whole or Butterflied?

I butterflied a bird last week for a church dinner and it turned out fabulous. I would highly recommend it. 22 lb bird cooked in 2 1/2 hours. Awesome. Good Luck, Brett

    What is a holiday roast?

I'm told that it is a NY strip loin roast. Still not sure of what that is, but at least I have some name for it. Thanks, Brett

    What is a holiday roast?

So I was at Fry's today (owned by Kroger's) and they had a "Holdiay Roast" for sale @ 3.77/lb. Anyone know what it is? Best way to cook? Thanks, Brett

    Trader Joe's turkey

Don't know about this year, but in years past where I am, TJ turkeys are really kosher turkeys. I like 'em. I was going to try smoking one this year. Good luck, Brett

    What to serve?

It turned out very well. Unfortunately, I tend to get mocked when I take pictures of food, so I didn't take any pictures. Plus with 30 people standing around - "Wait, just one more picture" wasn't going to go over well. One thing that suprised me was that essentially I had to leave all the...

    Brisket price-oh my!

Two days ago I got a brisket at walmart for 2.38/lb and pork butt from a butcher for 1.59/lb. The butcher was out of brisket or I would of gotten it from there. Brett

    What to serve?

Well, a friend of the family wanted me to throw a couple of butts on, so now I have 40 lbs of butts and a 15 lb brisket on. I haven't done that much before, and it is taking a little longer than usual to warm up to 250. Thanks for the suggestions. Brett

    What to serve?

Start driving now - Saturday @ 1 MST. It is supposed to be a chilly 72 degrees tomorrow. I was thinking about adding cornbread. For desert, I was lazy and just bought every type of cookie @ Trader Joe's. Holiday Joe-Joe's, Vanilla Joe-Joe's, etc., and my favorite, the Maple Leaf cookies. Brett

    What to serve?

Something has come over me and I decided that I wanted to have a small bbq party (I am not normally a party person). Anyway, I was going to smoke a brisket and two pork butts and was wondering what else I should serve. There will be about 20 adults and maybe 10-15 kids. So far, I have: Charo...

    first thanksgiving turkey!

It has been years since I have done a turkey. The first one that I did was on a 18.5 OTS. Now that I have a smoker, I might give it another whirl. Anyway, for something big, I like the two fire method with the bird in the middle. I also prefer the drip pan underneath. Good luck and let us...

    Knife Sharpeners?

I've got a Tormek, but it is pricyer then the Edge Pro. Really fast, though. I can do big knifes just fine, still a bit of a learning curve for smaller ones. Good Luck, Brett

Birthday Brisket - my 40th/first and a question

Well I left things alone and checked the brisket after four hours, where it was at 160. By the time my guests showed up, it was at 150. I thought that it turned out well for a first try. I thinK than having it foiled for six hours didn't help, I felt that it was slightly overcooked, it really...

    Anyone ever regret the 22.5?

That must of been a little tight. Were they BB's? Brett

Birthday Brisket - my 40th/first and a question

40th birthday that is/first Brisket. I decided to do my first brisket. Found a butcher and got a 12.5 pound cryovac badboy for 2.49/lb. It had a USDA mark, but it wasn't graded, at least not that I could see. Never seen one whole before. It was interesting trimming it, basically I just...

    Dilemma time!

I bought a OTG for $40. I think that the problem is, that unless the buyer is informed as to the difference between a silver and a gold, a $70 gold is barely cheaper than a new Silver. That being said, CL is free - put it up at the higher end and see what happens. Personally, I would keep it...

    How much charcoal?

I got the 22.5 for father's day too! The first thing that I did was chicken, and I simply filled up my Weber chimney, dumped a bunch of unlit Kingsford in the ring, and dumped the lit chimney on top of that. Then I waited for it all to get lit and went from there. My opinion was that it was...
