    The ranch is so big I wouldn't worry about something to hold the coals in. If you have to use a couple of bricks. Temp control is the way to smoke on a kettle.     Thick Steaks - Slow Roast Followed by a Quick Sear

    A good steak should be quick seared and slow cooked indirect. To me a good steak doesn't need smoke or anything else let it stand by it self. A crappy steak I would treat the same way. Then again why buy a crappy steak.

    Everyone here is wrong. This outta start a fight! First is Sa-Mokins and second would be Smiling Ed's Cajun Hickory. Both are fantastic to say the least.     I'll tell you before someone else does take the handle off and turn it so the Weber reads the right way. That's what they told me when I did mine. Nice clean install great job. Looks good.
