    Pizza

I use one of my One Touch's for pizza and build a hot fire. I also usually buy the dough from TJ's - they get it fresh every day - some times buy a wheat dough that I really like. I've done them on a stone, a pizza pan, and directly on the grate. Like directly on the grate the best - think I...

    Mold

I do basic cleaning on my WSM's and One Touch's after every cook - dump ashes, wipe up any excess grease, brush the grates, and clean my water pans. WSM's and 26 3/4" OTG are stored vents open and covered year round under an overhang on my deck. 22 1/2" OTS is in the same place with vents...

Cheap Handle for my new 22.5 WSM

I actually used a couple leftover knobs from when we installed new kitchen cabinets on mine.

    Must-do Mods for a Newbie

4 or 5 years ago, when I bought my 18 1/2", I came here and did the basic mods before I assembled it - 2nd charcoal grate, probe eyelets, handles. I did the same when I assembled the 22 1/2" a couple of weeks ago + I put it on wheels to make it easier to move (I also saw that here). I'm not the...

    18.5 WSM Cover

Guess I got one of the good covers on my 18 1/2". Mine fits good and comes on and off easy. Had wind gusts of 50+ mph a week or so before Christmas. Heard a noise and went to see what had blown over on the deck and didn't really see anything. Noticed the WSM was not covered and went out to...

    Square Shooter Meat Loaf

Good looking. Never thought of using parchment on the grill or WSM. I actually have an old spring form pan that I've drilled holes in the bottom and sides for meatloaf and my barbecue cheesecake.

    fatty ribs?

Tim - Sorry to hear that your experience at 17th St. has been bad. I've been several times and it has always been good. Of course, if you're in O'Fallon, just drive across the river to Pappy's or Bogart's. Ex Super Smoker, Skip Steele, is pitmaster at both. Been to Pappy's many times but...

insulating my WSM in cold weather?

Cold's not a problem. Wind can be but my deck is pretty much out of the wind so I've never had a problem. I can hold temps in both the WSM's and One Touch's.

    RIbs in the oven!!

My wife does her BB's in the oven. Will stand a couple racks in a rib rack on a stainless cookie sheet, adds 1/2 cup water, and steam roasts for the first hour @ 275. Another hour without water. Sauces and finishes under the broiler. Not barbecue ribs but barbecue style ribs. This is the...

    Costco ribs?

I like the untrimmed spares also and do my own St. Louis cut. Wife does prefer BB's. You should see the ones we get from the butcher - makes them Costco ribs look like shiners. I do buy ribs and other meat from Costco and I do like their quality.

    All Good !

See a lot of great looking barbecue posted here and have gotten some great ideas for things that I'm going to have to try. I didn't cook this past weekend and won't get to cook next weekend. Think I've learned the picture posting thingy and definitely will have to start posting pictures.

    RO Stockup?

4 - 5 years ago, when they 1st started to carry it, I even bought it a couple of times in Rancher bags.

    fatty ribs?

Best 'cue in Vegas is now back in St. Louis, where he belongs, and cooking at Pappy's & Bogart's. Heard Memphis Championship Barbecue is hit or miss but I've never been. Hear that if you MM's really good stuff that you have to go to the original 17th St in Murphysboro, IL. but I've been to the...

    Pulled Pork Lasagna.

I agree with Josh - leftover pulled pork in & on a lot of things. Would never have thought of lasagna. But I will the next time I have some!

    Spicy Oriental Salmon

Good looking salmon! My wife doesn't eat much fish and no seafood either. She does eat a lot of fresh grouper when we go to Florida. She knows I like it and I grill it often. When I do fish or seafood for dinner - she eats Cheerios r I grill something else for her.

    Smoker Identification and value?

Like something I've never seen before. Looks like a little of this and a little of that. Definitely not worth $1000 - don't even think I'd salvage it for scrap. $1000 would by 2 22/12" WSM's + have a couple $'s leftover for mods, meat, charcoal, and some wood chunks.

Brisket Today for the Giant Game BABEEEEEEEE!!!

Well done brisket is always a good thing and I see a lot of nice looking briskets here. Haven't done one since last summer - need to get off my butt! Liked the games over the weekend. Here's my predictions for next weekend & Super Bowl. 49'rs over the Giants in a classic game that may come...

    RO Stockup?

I've got a local fresh market that keeps RO lump year round and I'm in Illinois. I'm having trouble finding briquettes - down to my last bag. I like the Trader Joe's brand - almost positive it's made by Rancher. My usual TJ's carried it all last winter - they don't have it this year and I've...

Post a pic of your Pet (Dog) *****

No animals currently in my house. Cat died a couple of years ago from old age. Had dogs when I was a kid - last was a purebred Dalmation that passed away in 1994 - OK I was a semi-responsible adult in 1994. We talk about another dog - wife wants a Cavilear King St. Charles spaniel. We like...
