    The Water Pan and Smoking

I had trouble with Wiviott. Think he is to opinionated and he thinks his way is the only method to great barbecue. Most of us know better.

Butts and Ribs; can i do it?

You've gotten some good advice and have a good plan but I did notice that you actually have a WSM + 3 grills. You could do your butts on the WSM and your ribs on the Performer or the 900. Just build a low slow indirect fire, use a rib rack, and do your ribs on the grill. If you have the side...

    I've Been Gifted

I actually got a picture - wife will need to show me how to transfer from the camera and download to here. I am technologically challenged! Salmon turned out good but not great. I've done better. Got good smoke and nice color but I dried the tail pieces a little to much and that is usually my...

So when do you use a drip-pan on a kettle

I don't unless it's also doubling as a water pan for an indirect cook. I clean my grates while they're still hot after every cook and the ash and lose gunk from the bowl the next day.

    WSM not getting hot enough

Joshua - Are you trying to grill or smoke? Think you might be using to little charcoal to get the temps that you want. Most of us cook most of the time on a WSM in a range from 225 - 275. If you want a higher temperature or a grill affect try cooking with the door completely off and all vents...

    I've Been Gifted

I cured the salmon overnight and it's been in the Masterbuilt since 8:00 A.M. Just added the 2nd load of cherry chips and checked the fish - looking good. I'll know some time later this afternoon how good it will be.

    The Water Pan and Smoking

Dano I have both Smoke & Spice and Sublime Smoke by the Jamison's but I'm not a big fan of theirs. There are many books out there that are much better resources - anything by Steve Raichlen, any of the Weber books, Peace, Love, & BBQ by Mike Mills and Amy Mills Tunnecliffe, any by Dr. BBQ (Ray...

    WSM 22 1/2" First Cook & Mods

Tim - I probably still had 1/2 pan of water. Brian - One of the first things I did when I got my 18 1/2"r was come to this site and one of the first things I read was the Modifications. I knew that when I put the 22 1/2"r together that I was going to do the mods first. My mods are basic and...

    The perfect charcoal grill?

Lew - Yeah, I've shoehorned and have bought smaller packers that fit. I have 2 chimneys and get a real printed newspaper delivered to my house every day. Not sure I see the need for a gas starter. There are 2 sturdy tables on my deck and plenty of counter space in my kitchen - I have plenty of...

    I've Been Gifted

Not sure where to put this, so I'm putting it here ... Last night, when wife got home from work, she handed me a fairly heavy paper shopping bag and told me "Mike said this is for you." Mike is a co-worker who hunts and fishes. Unfortunately I don't but love game and fish of all types. Inside...

ACTS - Are They Necessary or Helpful?

Steve - I do enjoy tending my fires. That's half the fun + I'm part pyro. I've learned over the years what temp my 18 1/2"r will hold and when I need to check it which I'm going to do anyway, remember ... I'm part pyro. I know I'll learn with my 22 1/2"r. I'm already contemplating loading up...

    Fire in the Hole !

I use a pan on something big like a roast but usually not on something small. Have a sister-in-law that works at WalMart and she got me a whole bunch of disposable aluminum pans in different sizes a couple of years ago from a damaged shipment + I save and use disposable pie pans. I also...

    Just Wondering ...

Figured I'd use more fuel and that's not a problem for me - I Minioned about 2/3 of a ring and lit with about 2/3 of a chimney of Royal Oak lump. Checked my thermometer and it is within +/- 5 degrees. Did not have a problem with ash in the bottom vents - I have an additional charcoal grate...

    WSM 22 1/2" First Cook & Mods

Brian - I'm not the handiest guy and I was reluctant to drill into the WSM. I measured and remeasured, taped, and drilled pilot holes. Everything turned out good. I'll post some pictures - there are plenty already under Modifications - if I ever get around to learning 1st to remember to take...

    Wings - BCS Help

Jim - How'd them wings turn out? Hope they were better than the game - I was pulling for LSU. Alabama played a great game - couldn't believe how easily they shut down the Tigers.

    Smoker accessories

I need to get organized one of these days. I have stuff in the basement, garage, pantry, kitchen cabinetsand drawers, and probably if I looked ... Under my bed - I don't know why, but there's a disposable aluminum pan on my dresser. Only things that I for sure where they're at are my grills...

    Wings - BCS Help

Jim - Probably will need to run the WSM about 275 - 300 to get the wings crisp. I do my wings on one of my kettles. I'm a "classic" wing guy - "naked" wings with a good coating of hot sauce made with Crystal & butter.

ACTS - Are They Necessary or Helpful?

I'm a backyard guy - not pro and don't compete. Know something but not a lot about automatic temperature control systems. Just don't see the need for them on any of my Webers. I'm happy with the mods that I've made to my WSM's and have never had trouble bringing them to temp or hold temps for...

    The perfect charcoal grill?

Weber actually might listen and bring out a larger performer. I know, I was one of them, that asked Weber many times about a larger One Touch before they brought out the 26 3/4. My personal opinion is I'm not a big fan of a performer - do not see the need for one. I have not used the gasser I...

    Shawarma and tabbouleh

Brian - That looks great! I do like shawarma and tabbouleh. I have friends from Lebanon and love when we get invited to their house for dinner. He cooks on a 5 gallon bucket with a grill grate. I have actually seen him cook on coals that he has burned down from pine branch trimmings and it...
