    I found that if I keep the top vent opened completely, and leave the bottom closed, I get 325-350 with two baskets of K (heaping). I shaped my ring a little bit to get the air gaps at a minimum, made a big difference. There's never extra K to save because closing the top doesn't extinguish them...

    I filled the chimney with charcoal and waited for the top ones to look almost all white. Spread them out, dropped some more unlit briquettes, around the ring, then put it all together.     I cook butterflied chickens in my Q220 and the Genesis G all the time. On the Gen I'll turn the front and rear burners on low, with an aluminum pab directly under the chicken. On the Q, I place the chicken on a sheet of foil, folded up around the edges so the grease does not drip down.

    Pizza - how the $#!@@&*% do I get it from the peel to the stone?

    I guess no love for the super peel. I had the same issue, trashed a few pizzas when I started out. Once I purchased the super peel, problem solved. I use a metal peel to get the pizza off the stone when it's done cooking.

    The idea is that since there's no oxygen between the fuel and the meat, you get a very fast flash of heat without fire. I tried it once and did not like the results. Cast iron on the Performer gets much better results for me.
