    I cook Italian sausage regularly. I go higher heat, with a chunk, INDIRECT. 20-30 mins or two beers. One of my favorite go to meals.

    I really like the Stubbs briqs, but only for low and slow. At least in my experience, they struggle to gain the heat of many other charcoals. Great consistent quality, but has its place.

    I can't remember last time I dipped below 200#. That said, I'm willing to spend a few more pennies on the Walmart 15# bags. Just easier for me to manage. Picked up 12 to top off the stash.

    I've had a DOT for a year or two, love it. I don't take especially good care of it and it still works perfectly. Probably used 75+ times.

    Bill, Looks like a fantastic trip and as usual, incredible cooking. Refried beans are under appreciated thanks to Old El Paso and the like. Yours look delish! I too am a fan of the RT sauces. Will have to look for the rub.
