    Performer Problem

It'll work that way for a while, but then you can pull the gasser back out and use it to bake with. I'd never give up my Spirit. I use it to do vegetables, bake bread, all kinds of things. You'll be upset if you get rid of it. It might not be right away, but you'll miss it.

    Performer Question

I open the top vent all the way, and throttle with the lower vent. One thing my brother did, and I copied, he marked his vent ring with percents of open. From closed to 100 percent. It's a great idea, because the way the one touch is it's hard to see closed, and the percent of open is not...

Looking for advice on smoking cheese.

Thanks for the link. It's been a while since I posted, and I have yet to give it a try. It's going to be nice this weekend, and my son is going to be in town. I'm hoping we can do it together.

Looking for advice on smoking cheese.

I got a Weber 7576 Universal Stainless Steel Smoker Box for Christmas, and was thinking I could use it to smoke cheese. What if I put a bunch of apple wood in it with one lit charcoal briquette, put that in the bottom of my 18.5 WSM. My plan is to have the smoke box on the bottom for smoke...

Best Bird -- Kettle or WSM?

Since it's just the wife and I, I'm just doing a breast. I'm still planning on using the 18" WSM for the bird. My plan is to put it in an aluminum pan with chicken broth, carrots, celery, and onions. Next I'll lay the bird on top of that. I'm going to use just a bit of apple and pecan wood...

Kingsford burn times are not what they used to be

These "What Charcoal is better" arguments can go on forever. As long as you are happy with what you're using then life is good. Have a great week, Eat well, Love long, and enjoy what you have because it can all be gone in the blink of an eye.

Got the boys out to play

I'm not sure if I'm going to get a 14 bullet, or a 26 kettle next. I could use both, but it's going to be a one at a time thing.

A couple of beer can yard birds.

I used this recipe except I used pizza crust in a can, and it worked out fantastic. I'm going with it for now on. http://www.seriouseats.com/recipes/2014/09/easy-pull-apart-pepperoni-garlic-bread-recipe.html It's an awesome snack while you are sitting around the grills having a few beers.

A couple of beer can yard birds.

After weeding, and prepping all my flower beds, removing two bushes the winter took, moving and splitting most of my hostas, trimming and cutting the grass I decided it was time to kick back and cook. I pulled out the smoker for the first time this year and dropped in a few beer can yard...
