Just saw this vid. "competition?" steak

First time I have seen that process, grate turning, used. But since he always orientated the steak in the same direction, the grill marks are then controlled by how the grill grate is turned. Actually, I like competition bbq, especially brisket. Have eaten a good amount of it the last 12...

    Gonna Pick this up tomorrow

Ed... Thanks ! Agree with you on the overly rich condition ! Have tried the propane burner trick, but with a full chimney. Somewhat works. Also tried a high-btu weed burner (Harbor Freight 91037) for the WSM. Worked well !

    Gonna Pick this up tomorrow

Ed... We had one better than that. During starting up some charcoal briquettes earlier last year, the white smoke filled the air enough that our next door neighbor's family member though she had a kitchen fire. And yes, the Fire engines did show up.... multiple engines ! Ed... Would be...

    Gonna Pick this up tomorrow

Ed... Totally understand regarding no burning during these wind events. For the SCAMD no-burn days, we charcoal users have a friend in AQMD's Rule 445. On page 4, under WOOD-BASED FUEL [ Rule 445 (c) (20) ] states that "For the purpose of this rule, charcoal is not considered a wood-based...

    KCBS Chicken trends

Oh Tom... You have it so wrong, in so many ways ! First off... to those not knowing... We judges can ONLY judge based on the KCBS WRITTEN RULES, PERIOD. I stopped judging KCBS pro contests 5 years ago this month with just over 60 pro contest judged. SO, Tom... How many KCBS Pro...

    Days-ahead Brisket questions

I would think that either of the 2 choices you gave would work. But I agree with your statement regarding heat. You would probably have less chances of overcooking if you fully cook it first than reheat using a lower temperature.

    Wolfe Pit strikes again

Just a little fyi.... It was Larry that posted it here on this site. TVWBB is a weath of information. I find that doing my Due Diligence does wonders when looking for information. As far as Larry's Pepper Stout Beef, I too really enjoy it. So much so I made it for the private showing of...

Here's the link to Larry's posting on this forum of his Pepper Stout Beef that preceeds, by a full month, what you're calling the original recipe....

Andy... Small world ! Could that be Lakewood Blvd ? We lived just North of the where Stonewood Shopping Center is. I truely do not remember the shopping center. But I do remember McDucks... Even at that young age, watched it being built.

12 BBQ chains ranked from worse to first.

Andy ... The place where I had my first sampling (1950s) of BBQ is still around. Chris' n Pitt's BBQ. Had up to 13 restaurants at one time. Now down to 2, Bellflower and the one near where we lived in Downey. Pretty good BBQ. Not competition grade by any means. The Downey store...
