First Spare Rib Trim and Cook

Lava rocks would work as well but I decided to use ceramic because it was a little cleaner. I've actually had no issue keeping the temps low with just a foiled empty pan. Never really been a fan of water in a cooker so I've never used it. Just put in a little less starter coals to begin with and...

First Spare Rib Trim and Cook

Thanks Jim, I was originally going to use sand but couldn't find it. I figured it would be easier to clean the briquettes if something happened then to discard and get new sand.

    BBQ Chicken Temp

Thanks for the suggestion Brad. I assumed there wouldn't be that much of a difference in texture or flavor of the meat. I know it will affect the skin though.

Need Some Advice on Butcher Paper

I did add some brown sugar, honey, and dry rub when I wrapped them. I just skipped the couple Tablespoons of liquid that I usually add.

    BBQ Chicken Temp

I've been hitting ribs hard lately to try different techniques and need a break from pork. I plan on cooking either a spatchcocked bird or halves. I would usually cook this in my kettle but want to try it in the WSM. I am curious to see if it gives it a little different flavor profile since the...

Need Some Advice on Butcher Paper

Rich, I wrapped a rack of ribs with peach butcher paper last week for the first time. One question I had before I did it was whether to add a little bit of liquid like you would with foil. I decided not to even though the paper seems like it could handle it. I'm glad I didn't because the paper...

First time making spatchcock chicken on a WSM

Great looking bird. Getting ready to cook my first one in a few days. I can't decide whether I want to cook it at 275 or more like 325. Also like the ATCD, I've wanted one for a while.

First Spare Rib Trim and Cook

Thanks Rich, I was going to use sand but couldn't find any. I'm going to have to compare some cooks with the briquettes versus an empty pan.

First Spare Rib Trim and Cook

I bought the briquettes on Amazon. The brand name is GasSaf. They came in a box of 50. There are all kinds of brands and they look the same but these were a little cheaper and had good reviews. There wasn't any broken and they arrived in like a day even with all the shipping delays lately. Heres...

First Spare Rib Trim and Cook

The dog loved them. With back ribs, there isn't much leftover for him. Spares seem to be the way to go to feed everyone.

First Spare Rib Trim and Cook

It really is hard to beat. This is the first time I've cooked spares and it took the guesswork out of it. Held temperature like a champ.

Thanks Cliff, they tasted great too.

First Spare Rib Trim and Cook

I trimmed my first set of spareribs today and cooked them up on the WSM 18.5. It was a lot easier than I thought it would be. Smoked the rib tips along with the rack and both turned out pretty good. I also cooked the flap and scraps for the dog. I used the modified 3-2-1 method by Chris...

    Weber Kettle Premium Lid Holder

Should of clarified, my low and slow is around 250-275. Thanks for the info. Going to try a find a Weber one instead of a replica.

Did Kingsford change their formula for their briquettes?

Those new style bags with the tag line is all they have around me now in South Jersey. I have noticed a little bit different smell on startup. KBB isn’t my usual though so can’t really tell if it cooks different.

    Smoked ribs

That’s pretty awesome Andrew. I don’t think I’ve ever seen anyone run a snake between baskets before. I’d be pushing it with two racks as well especially since I use a SnS that takes up more grate space than the baskets. Rotating the ribs would help even the heat up on the ribs.

    Weber Kettle Premium Lid Holder

You didn’t have a problem keeping temps low after some build up? I might order one and at least try it out. There’s so many options on Amazon now it’s crazy. It seems like as soon as Weber stopped making them, 30 other company’s started. I’ll have to find one with good reviews.

    Weber Kettle Premium Lid Holder

I probably should have bought a MasterTouch but I wanted the green color the Premium comes in. I’m also not a fan of the GBS grate and already had a bracket for the lid vent like the MasterTouch. You live and learn. Maybe there will be a 26er in my future with the lid bail.

    Boneless Skinless Chicken Breasts

Seared them up and let them cook for 20 mins indirect did the trick. I couldn’t really tell a difference between searing first or last. I think the brine helped keep them moist.

    Smoked ribs

Those ribs look amazing. I've recently just started doing ribs on the kettle if I only have one rack. Did you use any accessories like a SnS or baskets, or just bank the coals?
