Wait longer? LOL How long are you typically waiting? I go off temp and the thin "blue" smoke appearance; not just temp alone. I believe it has something to do with the lit charcoals heating the other unlit charcoals, but don't quote me on this.

The one I order from SkyMall last year didn't have the curved probe - I can't stand those ones. Paid 39 for it (longer range one) with a code they offered. Good deal and it does perform well. And it's 23.99 today!
