    I don't think there is any reason to enlarge the vent holes or add any others. If you are trying high heat above 325 then a kettle is a better option. The WSM stock works just fine for temps below 300 for smoking. If you are having problems keeping temps between 225 -300 I would work on the fire...

    I used to prebake my pizza dough but have not in a long time. When I did I would only do one side. The pizza looks great. It took me a few cooks with my kettle pizza before I got them where I wanted.

    So I bought a couple of racks of spare ribs that I trimmed St. Louis style that I plan on smoking today. What do you all do with the big portion you trim off the back? I know I could smoke them along with the ribs but was wondering if besides smoking is there another way to use the meat?

    I have used one on my Kettle for a couple of years now. Make sure the stone you are using is made for the high heat the grill will get up to. It uses a lot of charcoal.
