    You shouldn't even need temp control for cold smoking. As you know, the outside temperature and cold smoking by default is well cold, no heat. If I'm smoking cheese then I know outside its 40° then thats good, lol. You could use the Heatermeter to warn you if your cold smoke gets above 70°...

    I had an issue with thermoworks high heat TC and so at the beginning of my smoke I had to use a thermistor 1 as my Pit probe. After I fixed it, I'm now back on it and it seems to be good, as I wasn't sure if I had the correct wires on the right post.

    Anyone else having problems with OSH Park shipping?

    More then likely an effect of the virus and shipping times overseas. Commercial airlines are used to transport packages and since there are not as many flights available, your order will take a much longer time and its probably stuck in customs.

    Thermocouple or not

    On my UDS I had used a permanent probe mounted to the side of the UDS and it extended to the center, about one inch below the grate.

    I would but I used a standard 8 pin IC pad, I would need to manually make the change. Also, I probably would not be able to as is, because I routed alot of traces close to the pads

    Geez, I havent even looked to see if the expanded metal divider is good or not. How would you even get in there to replace it.
