    I’m going to drop by the local Ace to get a feel for sizing… Currently have the “slate” full size insert for my Vieluxe- usable space is about 23x14 so just about same as this griddle. I tried a cast iron insert that replaced one grate, but that did not reach temps needed for smash burgers...

    Anything but cobalt or carbide will probably be destroyed cutting stainless steel - so don’t expect meaningful use of the steps after you’re done I used this for extracting some stainless bolts that had sheared - easier to use since it stays put but maybe not any better than regular oil...

    Another 56" Vieluxe Restore

    The OG summit burners will be 0.5in shorter and the flame will start very close to the front panel of the cook box - but it really is the only option if you can’t salvage the Vieluxe burners I would probably consider welding closed the first few orifices to keep the flames off the front panel...
