That is what I was seeing with my brisket ... I would hit 165-170 and then it would stop. Physics has it that if the meat is in a higher temp environment, it would need to keep climbing ... but again, what do I know.

Due to ignorant security guards at a recent Def Leppard concert, I am missing my Smokey Joe grates (both charcoal and cooking) They dumped by hot coals and dumped the grates at the same time. Anybody know where I can get the set for reasonable money?
