My original thread was "My project... with some mods", when I built it I added some bolts at the top of the pot for another grate. I also cut out the bottom of the pot and the charcoal holders are exposed.
I took out the diffuser and the rest of the grates, just using the top grate. My idea was...
You're right it is a River Country thermometer with the calibration screw. My mistake, I posted this late in the night. It works great, I've verified it with other thermometers.
I used some old school weber charcoal holders that I got on Amazon.
That plus some other mods... works great!
Got some boneless beef shortribs from Costco, quick rub and on the smoker. Excellent!
Used a plasma cutter for the pot, if you have one it's the way to go!

New to the forum, but been grilling and such for years.
So, here's the question. I have a Performer that's been cooking some great food for over 7 years.
I've never cleaned the inside of the grill besides brushing the cooking grate before cooking.
