    Nice looking butts, Jim. I can't offer help as I have always left all the fat on but heavily trimming is something I want to do for my next smoke. Let us know what you end up doing.

    Start to finish pics are here . Things went pretty smooth for my first overnight cook with charcoal. The WSM was amazing and held the same temp for 18 hours with one full ring of Kingsford blue bag. I never added any additional fuel. Conditions were ideal with mild temps and no wind but...

    Well, 18 hours and one butt is 198* and the other is 185*. I'm not sure why there is such a difference as both were about the same size but I went ahead and pulled the 198* butt and foiled it to let it rest. Hopefully, the other one will be done soon.

    Twelve hours into the smoke and temps are holding at 240*. I woke up at 4am and they were hovering around 220* so I changed the vents from 25% to 50% open. The WSM is amazing at holding and maintaining temps...I've read it 100 times on this forum but to see it with your own eyes is fantastic...

    Five hours into the smoke and the WSM is holding steady at 240* at the lid. This thing is amazing.
