    I tried it and it smoked really bad, so much so I ran to the store and bought a different brand. Maybe I got a bad bag or something. I'll throw a couple of pieces of the Western charcoal to mix in what I usually use but so far not a fan of it.

    I cooked one like this a month or two ago. I was hesitant for a very long time to give it a try but one week tri tips were dirt cheap so I decided to give it a go. I was pleasantly surprised how good and tender it was. My wife loved it since she hates seeing any red in her meat.

    Sous Vide Tri Tip?

    I have done it a couple of times, I used Montreal Steak seasoning too. Mine were thawed and I believe I did 3 hours. One I seared on a grill and another I seared in a CI pan. It been a while since I did it and it didn't wow me. I still like to cook them on the grill but it is fun to try new things

    Cooking the stuffing in the turkey

    I can't remember if I have done a turkey this way but I have done a chicken stuffed. I turned out good and the only thing that really stood out that I remember was it took way longer than I thought it would. Sorry I can't be any more help, I did this a long time ago.

    You can use it with the Vortex but you are gonna burn off all of the seasoning on your CI grates where the Vortex sets below them because it gets really hot! The only time I use the Weber grate is when I use my Vortex

    When I tried it I cooked it on a UDS, so no water pan, I did not flip it and I'm guessing my cooking temps were around 300-350 degrees.

    Spatchcock or whole?

    I have done it both ways, couldn't really tell a difference, presentation of a Spatchcock turkey has a sort of cool factor just because you don't see it that often.
