    Smoking tomorrow, should I go foiled water pan or no water pan at all? I am going to dump a full lit chimney, throw about 3 chucks on apple wood on, put the chicken on the top rack and let the WSM it do it's thing.

    Butter and jalapeno injection tasted great! You can really taste the jalapeno in the meat, its not really spicy or overwhelming either. I would definitely use it again!

    Tony Chachere's Smoked Turkey Legs

    Applewood smoked turkey legs, injected with Tony Chachere's Butter and Jalapeno Injectable Marinade and rubbed with Tony Chachere's Creole Seasoning. Smoked/roasted them in my 18.5" WSM between 325-350 for a little over 2 hours. Tasted great, take a look!
