    Kingsford Competition Briquets press release

Cooking update: I'm now at 14 hrs cooking time. I managed to get 3 hours sleep. I was woken up by my smoker alarm when the temp hit 245. At the first recharge of the WSM the Brinkman pan was half full so I didn't add any water. By 5am the pan was almost empty except for drippings. It seems the K...

    Kingsford Competition Briquets press release

It's been a few years since I've posted here but I thought I'd share my first experience with K Comp. I'm currently smoking 48 lbs of butts on my 18.5 WSM (6 butts). I did this for the first time last November with great success using the standard K briquettes. This time when I picked up my...

    Second brisket....what a chore!

ha ha you guys should be careful before volunteering so quickly to judge a wet T-shirt contest. I'd rather know who the contestants were first! Nope the smoker was assembled the same as all my other cooks that went off with no problems. The center section on my WSM fits very nicely into the...

    Second brisket....what a chore!

I did my second brisket Friday night. The first one I tried last summer was a total disaster. It was a select cut (first mistake) with an odd shaped flat It ended up overcooked, too much smoke (mesquite, second mistake), creosote formed in the smoker…yada yada anyway it was nasty ((shudder)). So...

    $15 Burger

This was inspired by Chris' smoked meatloaf. My kids named this the $15 Restaurant Burger. 1 lb ground beef (12%) 1 lb ground pork 1 egg 1/4 cup milk 1/4 cup catsup 1 tsp yellow mustard 1/2 tsp garlic powder 1/2 tsp onion powder Italian breadcrumbs In a medium sized bowl mix egg, milk...

WSM, Beer Can Chicken, No Water Pan

I've been experimenting with this in my highly modified ECB (no WSM until xmas ). So far the best result, not perfect yet, has been to start with a full chimney of lump fully lit. Stabilize the heat at the grate at 300 then put the bird on breast up. This is directly on the grate with no...

    Chris' Meatloaf

Yes the meatloaf is outstanding. We do a slight variation by reducing the ground pork to 1lb and increasing the ground beef to 2 lbs. I cook the loaf in a wire colender to get a better smoke. Very tasty.

    quick smoking dinner?

I know it is a little late but try smoking a meatloaf sometime. Absolutely wonderful. Use the recipe in the cooking section for starters. We prefer a 2/groung beef(12%fat is best) to 1/ground pork ratio. I smoke mine in a stainless wire colander vs. a pan. I think it gets a better smoke that...
