Went to Sam's club, was walking by the meat section when my eye caught an error.....they priced rack of lamb at leg of lamb. That's like 50% discount. I hit the brakes on my cart, picked up 3 packs.... Doing a pack today, will keep the rest for Memorial Day weekend. Season, 135 hot tub time...

I have done that in my wsm 22 and a PBC. It's time consuming and not feasible for every cook. I had to burn the wood down to coals in my weber kettle then add the coals to the smoker. Hard to control temp, worse than running a stick burner. fun experiment but never again.

I take them to 150, carryover cooking will bring 'em to about 160. I do medium rare when I grind my own meat.

I second Jumbo Joe. Good luck finding it in stores though.
