    Another Mini Build

    The lower grate level is about 4 1/2 inches down from the top and the upper level is about 1 1/4 inches down. Most lower grate levels are between 4 and 5 inches, I just chose to split the difference. I have room at this level to do a 10-12 lb turkey if I wanted.

    Another Mini Build

    Well I didn't realize that the Brides "Gotta Do" list was soooo loooong! But anyhoo the list is out of the way and I finally have my Mini WMS done~except for the paint-it's rained every day last week. I fired her up yesterday with a 4 1/2 lb butt. I love how this holds the temps steady!

    Ribs - what am I doing wrong ?

    Damian~the first question I ask when people have problems with ribs is this~is your themometer calibrated correctly? I'm thinking that your thermo may be off 20-30° and your actuall cooking temps are low.
