A couple of weeks ago I was watching "America's Test Kitchen" which comes on PBS here. I really like that cooking show because supposedly they'll try cooking something 100+ different ways to figure out...
We're having a spread at work on Wed. Yesterday I smoked a brisket for it and made some homemade sauce. When I was done slicing the brisket, I placed the whole thing in a very large Foodsaver bag and vacu-sealed it. I just left the bag in the fridge w/o freezing it.

There's a big dinner at work on Wed, and I'm smoking a couple of Briskets this weekend. I already trimmed them an they're in the fridge. Tomorrow is suppose to have a chance of rain, but Sunday is suppose to be Sunny. I'm not sure yet which day I'll smoke yet.
