    Unknown BBQ WSM Hinge

You can get a cheaper step drill at Harbor Frieght. I have them on 2 of my 4 WSM's, the ones we use competing. They are great. I can see no reason having caster wheels would be an issue, you just have tp pay attention to the instructions, and make sure that when you are using it, the hinge is...

Is there a Made in USA cast iron grate option?

If you're not absolutely set on cast iron, look into GrillGrates. They're made of anodized aluminum, lower maintenance and weight, and they work better

    Knife sharpener

RogerS, I'm a self admitted knife geek. For electrics, the Chef's Choice 130 is a great sharpener, but I wouldn't use it on an expensive knife, it's kind of a one trick pony in that it has one set angle. They have a model that claims to do European and Japanese angles, but again, there is just...

    GrateGriddle experiences?

I agree wholeheartedly! I have a brinkman collapsible tailgate grill. It's handy for tailgates and such but used to have trouble with hot spots and flare ups. With the GrillGrates, even temps all the way across and no more flare ups! And nothing falls through the grates anymore!

    GrateGriddle experiences?

I have a GrateGriddle but haven't used it yet so can't give a review. As to the full on sear you speak of, you can just turn your GrillGrates upside down and achieve the full surface sear you speak of. I wish I could take credit but have to give that to Meathead Goldsyn at www.amazingribs.com I...

14.5" Weber Smokey Mountain Cooker Model 711001

I picked one up last week. Took it to Masters in May competition to do my chicken entry. Worked like a champ! Only issue was the thermometer accuracy, but I had a Maverick checking temps. They could just do away with the cheap thermo and it wouldn't bother me a bit

    Props to RnQ

They are on a roll for sure!

Des Plaines Winter Burnoff - 2014 Des Plaines, IL 02/16/2014

This is a non-sanctioned event to raise money for NOAH, the national association for Albinism and hypopigmentation. Happening this Sunday. Organizer has asked for some additional judges. 6 needed, KCBS a plus, but not a requirement. This is a one day competition, cookers (15 teams as of now)...

    Mandolin recommendation

The OXO V-Blade Mandoline does a great job and comes with a good collection of blades for around 40 bucks. EZ to clean and most blades store on board. My wife bought me a gorgeous French one years ago but we never use it as it's much heavier and bulky than the OXO

    knife set

For comps, I would recommend looking at Forshner/Victrinox with Fibrox handles. They are well made, fairly inexpensive, and durable. In fact you'll see many professional butchers using them. I would recommend a chefs knife, boning knife, paring knife, and granton slicer to start for BBQ, then...

65 pounds of pork on the WSM?

One thing to watch out for when doing this many. Try and be agressive trimming outside fat on the butts or you could end up with an ugly grease fire! There's plenty of internal fat to keep them juicy

What's the best method to sharpen knives

I you do a dozen or so knives on the Apex EdgePro, you'll start feeling comfortable pretty quick. The downside to that tool is, at least for me, I'm not totally ambidextrous, so when I have to flip the knife and hold with my right hand while using my left on the tool, its a bit awkward. I still...
