Full to the top of the basket the center is full of lit coals. I wait about 10 mins before assembling the smoker. All vents 100% open. During the last cook all vents remained open and the door was off, max temp was 235-240. Gotta be a bad batch of charcoal.

Nothing else other than bad charcoal, I am no expert cook but I have logged over 100 cooks on my webers during the past 4 years. Have not run into this problem until the end of the season last year. With kingsford comp I have no issue maintaining temps. I will chalk this up to bad charcoal.

So was in costco yesterday and noticed for the second time they have full packers, and they are Prime! What's even better is they are selling for $3.79 per lb! The cryo packed choice flats sell for $6.79 per lb. that's a no brainer, picked up a nice 11lb prime brisket for later this week...

I can maintain 275 if I am using my guru, but without it, very hard to reach 225 with the door on. I will use comp for shorter non guru cooks
