Speaking of Knives, how do you sharpen yours?

I have tried many methods over the years. I started with Arkansas stones, following in my father's footsteps. Very good, but not always so accurate, given my skill level. (Bigger stones would have helped.) Then I tried the ceramic rods and next the Lansky system. The Lansky system was...

    Canadian Bacon

Kevin, I took another couple measurements of the fridge temperatures and 37 degrees is probably closer to the average. A couple of more items. Here are the details on the cook: Top vent open full and 2 bottom vents about ¼ open each. Meat put on at 10:00 am on a 85 degree day...

    Canadian Bacon

Made some about 7 lbs. of excellent Canadian Bacon last week. Used the mini-minon method of cooking. Here's the recipe': Boneless pork loin (size will depend on how much bacon you want to make.) 1 Tbl. Morton Tender Quick (or Basic Dry Cure) per pound 1 tsp. dark brown sugar per pound 1/2 tsp...

    How often do you Barbeque?

I usually grill 3-4 times per week, more in the summer than the winter. I have a WSM 18.5, but rarely use it. Got a 22.5 Weber charcoal grill about 25 years ago and a Weber gas grill about 10 years ago. I had shifted much of my cooking to the gas grill for speed and convenience (especially in...

Best wood for smoking boston butt?

I'm a big fan of NC barbecue, which is hickory smoked. But, I usually use a mixture of hickory and apple when I make my own.

Time to replace the grate on my kettle...

I definitely recommend the hinged grate for the Weber charcoal grill. I have had a cast iron grate on the Weber gas grill this past year, but I am not sure I can recommend it. It holds heat well, but I think I had more control with the original wire grate.

    Starting a fire

I belong to a forum on wood burning stoves - hearth.com. A great resource if you burn a wood stove. Folks on that forum touted SuperCedar as a great stove starter. It's a mix of paraffin and cedar designed for chefs. I got a free sample (just contact the owner) and, after trying them, requested...

    Cleaning out the freezer

Finished teaching summer school today. Time to clear out the freezer using the Weber gas grill: Pork Roast - 1.5 lb. pork loin marinated for 2 hours with: 1 clove garlic - pressed 1/2 tsp cumin 1/2 tsp dried oregano 1/2 tsp McCormick's Italian seasoning 1/4 tsp ground black pepper juice of 1...

    July 4th Q time?

Think I will just grill some ribs for the 4th. I barbequed some NC style pork butt a couple of weeks ago and have distributed it among my children and co-workers. Not sure they are ready for more. Expect to make some pastrami soon, but that just doesn't sound like 4th of July fare.

    Seriously...the Europeans get everything.

I don't see any reason why one would want to buy a white kettle grill. A black one retains more heat, minimizing the cost of charcoal.

Who is doing there own Fathers day cooking ?

Two of my three sons took me and my out to dinner today. The third is in Africa and could not be present. While I like cooking myself, this was a great present. Any time you can be with your family is a great time!

    Burgage.....Healthy and Un-Healthy

I grew up near Valentine, Nebraska. There was an annual culling of what was then the largest buffalo herd around. The meat was served as buffalo burgers at a cook-out at the stockyard. Wonderful. Have always been partial to buffalo since then. Much better than beef. Also makes wonderful chili.
