Thanks for finding this one. Going to do a 22-24 pounder next weekend from a turkey farm in Livonia. Been thinking about brining, will be a first for me. I think I will need to use the kettle instead of the WSM, probably too large for the WSM.
Also glad to see there is a WSM fan so...
Doing (2) 7lb. Butts, My first. Using the "Renowed Mr. Brown" recipe. I'm thinking that they should go on about 4:00 am Sat. to have for dinner Sat. evening around 7:00pm. Planning to let them rest for about 2 hrs.
Does this time line sound correct?
Actually this gadget works very well. It keeps all the chips submerged in the water, and I just pour the water into my drip pan if cooking indirect. the amount of water is about 3/4 of a large drip pan....I like this thing.
