French Toast in a Waffle Iron

After I'm done making waffles for the kids, I always crack a few eggs in the waffle iron for me. Presto: waffle shaped eggs.

What to use to make french fries

I have a dedicated cast iron one gallon pot with a glass lid for all my frying. Works brilliantly. BTW, follow the America's Test Kitchen recipe for french fries and you'll never go back to your old way. Absolutely perfect fries. Also, I use real lard (I only fry about six times a year), and...

    Enameled Cast Iron - Recommendations?

I got mine as a family gift. I have a 3 quart, red dutch oven, and it's a pleasure to use. As some have mentioned you need to baby these expensive pieces of equipment. Use only wood or plastic utensils, heat them slowly, and don't over heat. Look at the discount chain store called "Tuesday...

    Ideas for accessories/tools

I'd buy one. <BLOCKQUOTE class="ip-ubbcode-quote"><div class="ip-ubbcode-quote-title">quote:</div><div class="ip-ubbcode-quote-content">Originally posted by Craig A: Any time I'm cooking on my WSM I need to set up a portable table to work on. I really like the side table on my Performer, it...

    Chicken Breast Recipes

Here's an easy way to eat smoked lean chicken for two weeks. Buy the big bag of boneless, skinless chicken breasts from a warehouse like Costco. Pour a full chamber of lit charcoal in the WSM. No water, but foil the water pan. Put on the frozen chicken breasts, and sprinkle liberally with...

How big should my wood pieces be

I use the size of my fist as a guide. For a chicken, I'd use one fist worth of a light wood like alder or maple, half a fist if it's hickory or maple. For pork butt, I'd use 3 or 4 of apple and 2 or 3 of hickory. It's a rookie mistake to use too much wood. I've never had a problem with...

Where do you get your wood?

Here in Western Washington, downed alder is everywhere. For variety, I use a bag of wood pellets from Cash n Carry. Here at Cash n Carry they sell about five different types of wood extruded pellets from apple to Hickory, and I find it very convenient and easy to use. You can be very exacting...

    WSM on a wooden deck

Ditto for me. Cheap paver stones from Home Depot are the solution for this. Get a couple extra to use as a base to light extra charcoal for when you find the need to add lit charcoal to an ongoing smoke.
