    I've been spatchcocking my turkey for the past 5 years now but I cook it in my oven @ 450 and its always done in 80 mins. I buy the natural kosher turkey at Trader Joes as they're around 12-13 lbs. Dry brine the skin 24-48 hours with kosher salt and baking power. Apply an herb compound butter...

    Hi @Joe T Gomez ! I see you included garlic cloves and onion in the pan. Did that enhance the flavor of the butt? And did you add the roasted cloves to your mashed spuds? Enquiring minds want to know ;)

    Yesterday's prime rib

    Here's yesterday's prime rib for dinner. Rubbed with S&P, basil, rosemary & minced garlic. I was too busy to use my WSM so cooked it in the oven. Sides were au gratin potatoes and green beans. Sorry for lack of photos as this was the only shot I took.

    E6 spatchcock turkey

    I spatchcock my turkey but do it in my oven as it only takes 70 minutes cook time. I follow the recipe from Serious Eats.
