    15% Enhanced Turkey Breast

Picked it up before realizing I needed all natural. Now I have this heavily enhanced breast. My question is, should I just bypass brining all together now? Will I make it too salty? I really want the breast to be nice and juicy and not sure if the enhancement will provide that. Thanks.

    please inspect...

Thanks everyone! I actually put three rolled up pieces of foil underneath to give the saucer a slight lift. Was going to try it out this weekend but looks like the weather will be sour!

    please inspect...

I ordered Brinkman charcoal pan and bought 12.5 inch clay saucer from Depot. As you can see from pic the saucer is inside the pan - is this okay? Do I need to get a bigger saucer? Additionally, one sheet of Heavy Duty foil would not fully envelop the whole pan and I had to use two pieces. Its...

    Brinkman Charcoal Pan

Got my 18.5 WSM for Xmas and now I want a better pan. I've searched and clicked on various links for the Brinkman pan but they all seem to be dead. I understand that Brinkman charcoal pan is the way to go, right? Is this the correct one? My goal is to cook without water--I want to wrap pan in...

    Brined Turkey in a Cooler?

Brined my turkey in cooler for Christmas. Lined it with large garbage bag first then poured brine in. Only had to add ice once (outside the lined bag). Worked great, and didn't have to take up space in fridge!

Beam instead of JD for brine--is this okay?

turned out fabulous!! this was the juiciest turkey that I've ever tasted! Very impressive. My carving skills, however, leave a lot to be desired. I butchered the **** carcus. Good news is that I carved enough white and dark meat to present in a casserole dish. I actually started carving the...

Beam instead of JD for brine--is this okay?

Merry Christmas! Turkey is air drying In fridge as we speak. Brined 24 hrs in one cup Beam instead of jack. Is this okay? Too late now I guess lol. Thanks in advance!

    First WSM 18.5 arriving tomorrow!

Thanks for the replies everyone! Well, it arrived a day late so all I've gotten to do is assemble it--and let me tell, that thing is beautiful! Today I get off at 3pm so I'm going to go home and pour a chimney full of lit just to see how it works--remove any manufacturing residue. Tomorrow I'm...

    First WSM 18.5 arriving tomorrow!

and I can't wait! I've had a OTS silver for months now and have enjoyed it thoroughly, but now I'm ready to take it to the next level! Also, I'm off on Thursday so this is icing on the cake! Now I've heard I have to run a couple of dry runs to condition the seal, is that correct? I'll probably...

    What's the difference?

I'm sorry--Since my Birthday and Christmas are relatively close together and am collecting Amazon gift cards from family. I already have $100 down and hopefully by Christmas will have the $250~ to buy one. That's the place I'm going to have to buy it!

    What's the difference?

    What's the difference?

Amazon has two 18.5 WSM's: the Weber 721001 and the Weber 2820. It looks as though the former is the new model. Is this correct? If there are differences, what are they? I have $100 gift card from Amazon to go towards this baby but I want to get the right one. Thanks!
