Getting it on top was the easy part. I miscalculated how difficult getting this beast off of the roof would be, but I got away with it this time without any damage. 😅
About 1/4 mile away from my house, I’m headed to the grocery store and I see this Weber spirit sitting on the curb. I stop to inspect it, looks really good with new SS grates. On the roof it goes and here she is waiting for a detail.

Well, Weber confirmed it: the store is gone and there is no other one around. They pointed me to the website to order items or to let them know if there’s something specific they could help me with.

Unfortunate news.
I just reached out to Weber for an answer, that would be incredibly sad if indeed there’s no longer a parts store in the area. I’m out that way once every year or two for business and I always looked forward to making a stop at that store for goodies.
Well it would appear that Weber moved out of that facility in Palatine and it has been torn down for redevelopment.
I’m wondering if they opened a new parts store in Huntley perhaps?

Kept it very simple: light coating of oil, liberal amount of salt and pepper, I let it come up to room temperature and had it indirect around 230 degrees until 120 internal, then I just seared the hell out of it until it looked proper.
Saw some boneless chuck roasts at Whole Foods on sale for about $3.50/lb so I figured, why not? I’ll do a reverse sear: indirect to 120 internal then sear.
big flavors and still pretty tender!
