    Weber's Black Peppercorn Mix Availability

I've been using a Weber's seasoning product "Weber's Black Peppercorn Marinade Mix" for years. I previously found it on Amazon but recent searches show nothing. Neither can I find this anywhere else. Weber's website list it, but show no stock. Anybody know if this is still a product? Has...

    ThermoWorks Billows

Well, it's apparently more difficult than I thought and I have searched. Can anyone point me to directions on how to post a picture with a response on this forum?

    Custom Handles

Sweet! I particularly like the Smoke attachment. Good solution for a nagging problem.

My first "invasive" WSM Mods -- Looking for advice on technique.

My stock cover fits snuggly over my 18" which has the hinge and two small side knobs which are used as handles in removing a hot center section (something rarely done as it turn out).

    ThermoWorks Billows

I've been using the Signals/Billows since they were first launched. Had previously used an Auber which did get the job done but was inconsistant and it took forever to find an acceptable PID. The Billows works great but I did make one mod for it's attachment. I made a manifold which clips...

    Signals/Billows struggle to heat

Follow up... I have had several cooks with my Signals/Billows since this thread was started. All have performed very well with no difficulty in holding the various temperatures programed. No idea why I had the initial difficulty it reaching the programmed temperature. I'm certain it was...

    Curious Observations on my 18.5

I've been running a number of dry burns on my WSM 18.5 while I attempt to tweak my new ATC. Basically I load up the fire box and add 3/4 chimney of KBB. I'm running these test at 225* and 325* with the top vent fully open. Performance has been very good with respect to temperature...

    Signals/Billows struggle to heat

FYI... I finally got my billows to perform well on my 18.5 with regard to temperature control. I made a mounting manifold which permits all three holes to be used on the active inlet port. I included an air cutoff slide gate which permits me to reduce the 40+ cfm of the billows to something...

    Signals/Billows struggle to heat

Set up my new Signals and Billows for a butt cook. Had ran a trial run yesterday at 225* to confirm everything worked as expected. It did. Today I set the butt run at 300* and absolutely nothing I do will get my 18.5 past 271*. I suspect it may be the Billows air entry into the smoker...

    Thermal cover for the 18.5"

I've used a fiberglass welding blanket and it does work, and handles the heat. It's just a bear to work with. I have also made a blanket for the pit barrel using an automotive firewall product rated to 300*F. It worked well for 225* cooks. But cooking at higher temperatures caused the inner...

    Thermal cover for the 18.5"

Ouch! Had no idea they wanted that for the product. Thanks Chris for the insight.

    Thermal cover for the 18.5"

Has anyone found a source for the Heat Shield Products thermal jacket for the 18.5? I looked at a number of alternatives including a couple I've made with some of the recommended materials. My DIY efforts didn't handle the heat at hotter cooks so I'm back to exploring a commercial solution...

Can you install the top gasket after the hinge kit?

I installed the gasket strip after I had added the hinge to my 18.5". No problem at all. Works well. Do insure the lip surface you glue the gasket to is very clean as the gasket will come loose over time. If it does just clean the area with brake clean and reattach. Simple really.

    WSM Dynamics of Temp Control

LOL, I checked ours for amusement one time. To say the setting temp was an approximation was misleading at best. I don't remember the double digit number but I gave up trying to convince my wife to just add the offset to the oven setting. However, I haven't missed any meals just because...
