    thermometer questions

    I have had an accu-rite single probe thermometer for about 3 years and have not had any problems with it. I think I bought it at Home Depot for around $15. I also have a dual probe Maverick wireless (got it last Christmas) and it adds convenience, and I use it most of the time now.

    Adding water.

    I use a 2 liter soda bottle filled with water and haven't had any problems with water falling onto the coals. I haven't used sand yet, but am considering it.

    I have also used apple, oak and hickory. I agree - the apple does not give quite as strong smoke flavor, I think you'll be fine. Did you marinate the meat before you smoked it?

    I tried the seam sealer, it still leaked quite a bit - it may not have had enough time to dry, and it rained very hard. I will try to reapply it this weekend and let it dry for at least 24 hours. I have an old cover from my ECB that I threw over my WSM, so I'll see if that helps as it is...

    I bought some of the seam sealer at a Sports Authority store yesterday and applied it to the seams (cost was $2.00). The directions say to let it dry for at least 24 hours, and I was only able to let it dry for around 12 hours before it started raining (no Q'n today! ), so I may have to reapply...
