Sweetening Mascarpone

I recently made this dessert which features mascarpone. I like to sweeten it a bit first. However, when I incorporated the sugar the cheese lost its creaminess and became lumpy.

I did some internet searching and found a bunch of recipes for tiramisu where the mascarpone is sweetened. Most of those recipes start with a cream and egg mixture that is whisked and the cheese folded in to.

other recipes for sweetened mascarpone use honey instead of sugar.

I was hoping for a quick and easy way to sweeten mascarpone, without losing its texture. Any suggstions?

Unfortunately I can't think of a way other than drizzling honey over it, to incorporate a sweetner and not alter the texture. You might try using something fine like confectioners sugar and beat everything at a high speed. The high speed should help with the texture.

You could make a simple syrup and use that to sweeten the mascarpone if you didn't want to alter the flavor.
 
thanks guys. I'll have to play some next time around.

I was hoping to find something out about why the change occurs.

My guess is that the granulated sugar pulls the water out of the emulsion.
